Sydney Autolyse Bakery

Autolyse is an optional dough process. It refers to a period of rest after the initial mixing of flour and water, a rest period that occurs sequentially before the addition of yeast and other ingredients. – Wikipedia.org. Loopcreative were appointed to design the recently completed Autolyse in Sydney. Rod Faucheux of loopcreative conceptualised a 400sqm space, separated into café, Pissaladière, seating and production bakery-kitchen. 

It is here in the operating theatre cum production kitchen that the master baker is elevated to surgical precision status under the umbrella of the 3 surgical instrument lights. The 12m long marble clad block provides the platform to which the baker creates the baguettes, croissants, fresh bread and a variety of other savoury dishes. Classic Bentwood chairs, marble tables with brass edging form part of the design to reinforce that this is to be considered a serious reinvention on french style baking. 

The bakery is the third completed project by loopcreative in this location after Roger Tait Man and Brand X and forms part of a five level retail activation to one of the external terrace spaces at Central Park; Sydney’s newest retail destination of Jean Nouvel’s One Central Park residential tower on Broadway.
